Whether you’re feeding a large family or hosting a dinner party, these enchiladas are sure to please.

The History of Al Pastor

Al pastor is a style of cooking marinated meat that was first introduced to Mexico by Lebanese immigrants in the 1800’s. The marinade typically consists of spices such as oregano, cumin, paprika, and chili powder. The marinade is applied to the beef and then it is roasted on a spit over an open flame. This method of cooking is similar to shawarma, which is popular in the Middle East.

How to Make Al Pastor Style Beef Enchiladas

Start by preparing the marinade. Combine oregano, cumin, paprika, garlic powder, onion powder, and chili powder in a bowl and mix together. Place the beef cubes in a large bowl and pour the marinade over the beef. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least an hour.

Once the beef is marinated, preheat the oven to 350 degrees. Grease a 9x13-inch baking dish with olive oil and spread the beef cubes in the dish. Bake the beef in the oven for 20-25 minutes. When it’s finished, remove the beef from the oven and let it cool.

Once the beef is cool, assemble the enchiladas. Place a spoonful of the beef cubes in each tortilla, roll it up, and place it in the baking dish. Once all the enchiladas are assembled, pour enchilada sauce over them and sprinkle cheese on top. Bake the enchiladas in the oven for 20-25 minutes, or until the cheese is melted and golden brown.
